Ingredients :
  

  • 2 cups 250g all-purpose flour
  • 1 tsp baking powder
  • ½ cup 50g ground almonds
  • 1 tsp cinnamon optional
  • 1 cup 225g unsalted butter, softened
  • 1 cup 200g caster sugar
  • 4 large eggs
  • 2 tbsp milk
  • 2 tbsp orange zest
  • 1 ½ cups 225g mixed dried fruits (raisins, currants, and sultanas)
  • ¼ cup 50g candied orange peel
  • 2 tbsp whisky optional
  • 20-25 whole blanched almonds for topping

Instructions :
 

  • 1️⃣ Preheat & Prepare
  • Preheat the oven to 320°F (160°C).
  • Line an 8-inch round cake pan with parchment paper.
  • 2️⃣ Cream Butter & Sugar
  • Beat the butter and sugar together until light and fluffy.
  • 3️⃣ Add Eggs & Flavoring
  • Add eggs one at a time, mixing well.
  • Stir in orange zest, whisky (if using), and milk.
  • 4️⃣ Mix Dry Ingredients
  • In a separate bowl, mix flour, baking powder, and ground almonds.
  • 5️⃣ Combine & Fold in Fruits
  • Gradually add dry ingredients to wet, folding gently.
  • Stir in the dried fruits and candied peel.
  • 6️⃣ Bake to Perfection
  • Pour the batter into the cake pan.
  • Arrange whole almonds in a circular pattern on top.
  • Bake for 1 hour 30 minutes, or until a toothpick comes out clean.
  • 7️⃣ Cool & Serve
  • Let the cake cool completely before slicing.
  • Enjoy with a cup of tea or coffee!
